
In the past I always loved Cruesli, which is unfortunately not low carb. After a while eating greek yoghurt with some walnuts and red fruits, I missed the crunchyness the most, if that’s a even a word. That’s when i started investigating on Granola. Currently in the supermarket you find some low carb granola types as well, but still with more carbs then this one. Are you looking for a delicious healthy crunchy granola? This one I still make every week.

The first time you make this it’s quite an investment to buy all the seeds. I keep the ingredients in a covered box so everything remains well.
- 20 g ground linseed
- 20 g hempseed
- 30 g pumpkinseed
- 10 g chia seed
- 20 g sunflower seed
- 40 g pecans
- 3 tbsp sukrin gold syrup (or you can use maple syrup, but that does effect the nutrition)
- 1 tsp cinnamon powder
- 1/2 tsp lemonjuice
- optional: after cooling down you can add cacaonibs to it
Step 1
Get all the ingredients together on your counter. Use a bowl which you can place on a scale. First measure the pecans and crush the pecans.
Step 2
Put the seeds one by one in the bowl and weigh them before adding the next.
Step 3
Then add the cinnamon, lemonjuice and sukrin gold syrup. Mix these with the seeds and pecans with a spoon or spatula. Be aware that this can be very sticky.
Step 4
Preheat the oven to 180C. Look for a baking tray and put some parchment paper in it.
Step 5
Put all the ingredients from the bowl in the parchment paper covered baking tray and devide it equally over the paper.
Step 6
Put the baking tray into the oven for 12 minutes. Keep an eye on it as every oven works differently and you don’t want it to burn. As soon as you smell the cinnamon from the oven it’s almost done.
Step 7
Get the baking tray out of the oven and let it rest until cooled down. Then it’s ready to use.
You can store and safe it longer when put in a preserving jar. Most of the time I make double the amount so I can use it for 10 days.
